Namely, I used Quince from our tree that I peeled and then sliced and simmered in a shallow pan until soft like peaches. They simmered with two cinnamon sticks and some brown sugar.
The recipe called for 1 cup of flour, 1 cup of sugar and 2 tsp baking powder mixed together, with 2/3rds of a cup of milk and one egg added. Once this was all stirred together it didn’t look near enough to cover my 9×13, I added a wee bit more flour (1/4 cup) and bit more sugar, and a smidge more milk – 2 tbsp. While that was all going on, the 1/2 cup of butter was melting in the baking dish in the oven. I poured the batter onto the melted butter (no mixing) and then spooned the quince mixture on top. I used about 5 quince, sliced. They have a large center pithy area that is unusable so 5 isn’t as much as it sounds like. I tossed a few berries on for fun as well. It was bloody good.
And we still have sooo many more to use up!
